What’s that? Kombucha
Whuh? You heard me. Kombucha. You never heard of Kombucha?
No…uh…maybe…I dunno, what is it? Ok, it’s fermented tea. It’s good for you. You get this blobby thing, and put it in a big jar of sugary cold tea, leave it for about two weeks, and then you have a nice fizzy drink that has probiotics in it.
Oh right, like yoghurt? Yep, but probably different bacteria. Still, all good though.
Where does the blobby thing come from? Nobody really knows to be honest. Which is part of the reason why I love it. The earliest recorded of it was about 2000 years ago. It either originated in Russia or China, but yeah…nobody knows how the SCoBY came to be really.
SCoBY? Yeah, that’s the blob. It stands for Symbiotic Colony of Bacteria and Yeast. Also can be called a Zoogleal Mat. How sweet is that! Zooglyzooglyzoogly! Some people call it a mushroom for some reason but that’s a bit misleading innit. I think that probably sounds a bit offputting. And we don’t need to make the process sound more offputting.
Is there booze in it? A tiny bit.
